Weekly Rundown

With a lot going on this week, I thought it was a perfect time to lower my miles and just enjoy the week instead of stressing out how I was going to fit everything in.  It worked out perfectly and I felt well rested going into my race on Saturday.

Monday – one mile and a really great BodyPump class.  I went up in my chest and squat weights too!

Tuesday – 4 miles with Cara.  We took a lot of walk breaks as needed.  Temps were in the upper 80’s and humid when we met to run after work.

Wednesday – 4 miles with Cara.  Even though it was hotter, we ran more than we did the day before and reversed our route from Tuesday.  We hit the local parks both days where the shade was plentiful!

Thursday – one mile and Mumford and Sons concert with the family.  Top 5 concert I’ve ever been to!  They were amazingly good and the concert was awesome!

Friday – one mile.  I had hoped I’d want to run more, but with a late night and early morning, my couch was calling my name more than the road.

Saturday – A Brighter Path 10K.  (race recap soon)

Sunday – Race the Bar 8K (race recap soon too)

Total Weekly Miles: 22.28

2015 YTD Miles: 640.28 on my way to 1500

Meals

We cooked some great meals this week.  We’re rocking it in the kitchen! hellofreshjune8

  • Pan-seared Salmon with honeydew and cucumber relish and sweet potato rounds
  • Charred Zucchini and Bean Quesadillas
  • Prosciutto wrapped Chicken with Garlic Spinach and Tomatoes

Other food:

  • Hot Italian Sausage with peppers and onions Sandwich at the concert (so good!!)
  • Mushroom and Onion Pizza

Weekly Fitness and Meal Plan

This is it!  The last 2 days of the school year is upon me!  After Tuesday, I’m officially on summer vacation.  Phew!  What a school year.  I am ready for some R and R.

This week looks to be about normal as far as workouts but I hope to add in some more daytime classes at the Y.  I’m keeping my BodyPump afternoons on Mondays.

Fitness

Monday – 1 mile and BodyPump

Tuesday – Last day of school!!  4 miles

Wednesday – 4 miles, with maybe a CXWorx

Thursday – 4 miles, possible BP class

Friday – 1 mile I may be brave and try the athletic conditioning class.

Saturday- 6-8 miles

Sunday – 5 miles

I love that Hello Fresh is doing more salads now that it’s summer!

  • Chicken Wheatberry Salad
  •  Mediterranean Chicken Salad
  • Quick Marinated Steak
  • Charred Shrimp Skewers

Meal Prep and Planning

I’m going to be totally honest with you all and say until about two months ago, I sucked at meal prep and planning.  I always had the best intentions, but laziness, lack of inspiration and just not enjoying cooking got in the way.  It was a constant stress in my household and Nick and I spent way too much time bickering about what we were going to cook for dinner.  We always had the normal rotation of meals too.  Spaghetti, tacos, sandwiches, take out, repeat.  It was getting to be awful and we were starting to eat out more than we were eating in the house.10-i-hate-cooking-funny-quotesIn addition to all of the eating out, the pounds were starting to pack on.  50% of my meals were spent at a restaurant where I had no control of what was going into each meal and I wasn’t always making the best choices either.  In addition to most meals out, they also included a brew or two.  Something had to change.  I was feeling awful too.  Just blah and I was popping Tums like they were candy.

Enter Hello Fresh.

Some people find the service too expensive and not for them and that’s totally a personal decision I understand.  But for us, it has been exactly what we needed to get us back on track.  For $70 a week for 3 meals for 2 people, we’re spending less than we were during our take-out foodathon.   The other thing that money can’t buy for us is that we now have variety each week with our meals so the spaghetti/taco rut is no more and we’re eating food that we’d never dream of cooking ourselves.  I am no expert in the kitchen but I’ve cooked salmon and cod, two foods that I would have stayed away from cooking from a lack of experience.  I nailed those meals!  I’m gaining confidence in the kitchen and I love it!  I dare I even say it…like cooking now.  image

Part of what has made this successful for us too is the prepping each week.  Each Hello Fresh meal comes in a plastic bag with all the ingredients you need for that meal.  We unpack each bag and store the veggies in these ultra lite green boxes.  When we pick our meal for the day, Nick and I tag team the cooking.  I do all the chopping and he’s in charge of the meat.  We then work together to cook the meal.  Usually I keep prepping for the rest of the meals, pre-chopping most of the veggies so that we have it easier for the rest of the week.  I also am lucky that I’m home around 4pm every day so I tend to do a lot of the prep work before Nick’s home around 5:30pm.  I also pre-cook a lot of the meals too before I head off to run so that all Nick has to do is finish it up/warm it up when he and Hayden are ready to eat.

The food is amazingly good!  We’ve only had one meal out of 15 that was kind of eh?  All the other meals have been really, really tasty.  We love the variety and selection of meals.  We always choose a veggie option.  We’re eating and trying things that we would have shied away from before.  Usually we are a meat and two sides kind of family, but we’re realizing that we don’t have to have a starch with every meal, pasta is not a side item any longer and I haven’t had a roll with dinner in weeks.

As far as how I’m feeling, I haven’t had to pop a Tums since starting to cook and eat at home.  I feel better when I eat our Hello Fresh meals and actually find that normal foods that I crave just don’t sound as great any more.  I love the freshness of our Hello Fresh meals too.  I have lost 4 lbs since we started eating at home which is awesome considering I’ve made no other changes.   Most importantly, Nick and I are loving cooking and spending time in the kitchen together.  It’s not a chore but something that we actually enjoy.

Weekly Rundown

6 more days and I’ll be on summer vacation time.  I can do this!  Who else is counting down the days for summer to start?  No early mornings rushing around, no more packing lunches…easy days and fun are on the way!  I can’t wait!

This week was an awesome training week for me.  I love a week where everything clicks.  My runs went well and I had a ton of fun along the way.

Fitness

Monday – one mile and a really tough BodyPump class.  I am finally back to the weights I left off with and I’m thrilled.  Hoping to start moving up some of them soon.

Tuesday – 5 miles: 1 solo and 4 with Cara.  I got out of a meeting earlier than planned so I got a quick mile in before meeting Cara to run.  We had the most fun running these crazy fast/slow intervals.  It was cracking us up.  We’d pick a spot just up ahead and run at a pretty fast pace then walk or jog for just a few seconds and do it all again.  Half the time we were laughing and the other time, gasping for air.

Wednesday – National Running Day!  We had an awesome turnout for our running get together.  Thanks to Junction 311 for joining us and giving away prizes, including a free race entry.  It was great to meet new people and everyone had a great time!  I ran 3 miles and add another one at the end for 4 total.  I also forgot my watch and loved the freedom of just running!  keWl9IFY3oRi03wTf3-TrIPRaGSq2axCSrFnmembzck

Thursday – 4 miles with Christine around Hamilton Lakes.  We kept it super easy and actually ran more than we did the last time we were there.  The weather has been cooperating for the last few days!

Friday – one mile early in the morning “rest day”

Saturday – A small group of us met to run from Gibson Park.  Every time someone suggests we run out there, I get excited because it’s somewhere different to run.  Then immediately I remember how hilly it is within the first mile.  It’s seriously no joke!  I planned to run just 7-8 miles and stuck with Amy for the 6 miles.  We had a great time catching up and chatting.  I felt really good so I ran 3 more solo miles for 9 total.  I felt really great when I finished!  I saw my friend, Lauren, out there who was running a race.  saturdayselfie

Sunday – We had our family photos in the morning and I was able to get an afternoon run in post pics and Hayden’s party.  It felt good just to get out there for a bit.

Total miles: 27.35 miles

Weekly Rundown

This is my second post of the day because I forgot to set up my Weekly Fitness and Meal Plan to post yesterday.  The life of a blogger! 🙂

This week was a wonderfully easy week for me with running.  I just took it as a recovery week and did a lot of great easy runs and walks.  It was also super social for most of our runs and it was exactly what I needed!

Fitness

Monday – One mile and a BodyPump class.  It was a great class and I’m already back to my normal weights on everything!

Tuesday – 4 mile run with the girls!  We ran most of the 4 miles and walked some too.  It was really hot, sunny and humid.

Wednesday – We tackled some speed work.  Cara’s training for a 5K and we decided we’d show her our support and run some speed work with her.  It was silly fun and we all did so well!  We ran a mile warm-up and did 60 x 60 (1 min fast, one minute recovery) for 8 rounds.  I was so surprised at some of my pace splits!  I had not hit some of those paces in a long time (I stopped doing speed work almost 2 years ago).  I also felt super strong and I could tell that my HR training has paid off.  The highest I saw on my HR monitor was 172 and that was right towards the end.  I was in the 160’s for most of them and was running sub 7’s.

Thursday – 4 miles of solo recovery run.  I kept it super easy, ran at a HR of 135 or below.

Friday – one mile

Saturday – 6 miles with friends.  We have some friends who either just had a baby or is pregnant and they came to meet us!  It was so great to see them and we all enjoyed our walk. We had a huge group walking and talking down the Greenway.  Our friends turned to head back at 1.5 miles and the rest of us went out to mile 3 and ran back.  We had great run!  It was the perfect start to the weekend!

Sunday – Race the Bar 5K with Christine and other runner friends.  It was a great event and I’ll have my race recap up tomorrow!

Total weekly miles: 23.14 miles

2015 Year to Date Miles: 564.35 on my way to 1500

Weekly Fitness and Meal Plan

Happy Monday!! Hope that everyone is enjoying the last minutes of their long weekend.

This week is jam packed at work. End of year testing starts! It’s always makes for long days. My 8th grade students also have their Spanish I assessment this week. May is a super busy.

Fitness

Monday – Meeting Christine and Cara to run 3.65 miles!! Christine has run every day for a year!!

Tuesday – Run 4 and dollar tacos after!

Wednesday – Speed work of some sort. We’ve been making it up as we go along.

Thursday – Run 4

Friday – 1 mile

Saturday – We will be in Williamsburg for the weekend. I’m planning on running 5 miles for the Virtual Badass Runner 5 miler

Sunday – 4-5 miles either in Williamsburg or when we get home.

Meal Plan

We have some delicious Hello Fresh meals. Our box arrived late Wednesday so we saved everything for this week.

  • Tarragon Chicken and Wheat Berry Salad
  • Cuban Style Picadillo
  • Roasted Veggie Quesadilla

Our newest box will show up Thursday due to Memorial Day.

I’m pacing the Race 13.1 Greensboro half marathon this morning and I’m super excited to have the opportunity to pace a hometown course again.  The weather looks to be cooperating, not too hot!  Thank goodness!

This week is looking to be pretty quiet.  I better go find some wood to knock on!

Weekly Rundown

Anyone else had one of those weeks?!  Started out so pleasant and by the end of the week, I was done.  D-U-N!  I hightailed it out of work as soon as I could on Friday.

Lucky for me, I was able to still keep up with all my workouts despite a hectic week. I always want to cue some SportsCenter like music when I get ready to do these weekly rundowns…  CUE MUSIC!

Fitness

Monday – 1 mile After a weekend long concert, one was all I could do.

Tuesday –  7 miles  I got out of a work meeting earlier than planned so I had time to get a few miles in before meeting everyone to run at 6pm.  I got 2.8 in solo and ran the rest with the girls.  Given it was hot as heck out there, I felt surprisingly good.  Thank you HR training!

Wednesday – Christine and I met to run 4 miles.  After 2 miles in, we decided walking and talking was more of what we needed vs running.  So we walked 2 miles and had a great conversation.

Thursday – 1 mile early per Hayden’s orchestra concert!  It was so good!

Friday – 1 mile early but after a crappy day, I ran 2 more miles to bring myself back down.  It was just what I needed.

Saturday – Christine, Bob and I met to knock out 9 miles.  We had a super run!  I also hit my 500th mile of the year and my 3000th mile of running streak!?  What the what?!500miles

3000mileSunday – Some Mother’s Day miles with friends.  I ran 6 miles with the girls and Nathan. I practiced pacing for next weekend’s half and nailed it! Really great run!

Total Weekly Miles: 31.11 miles

Meals

I’ll let the pictures do the talking!  We had some super yummy meals this week.  I’m cooking like a maniac and you know what?  I love it!!  I’ve stepped outside of my comfort zone and I’m cooking foods that I’ve never made before.  Fish used to scare me.  Not any more! Hello Fresh has helped me build up my cooking confidence!hellofreshmay4

Things are still rolling this week. Lots of things going on!  Two meetings scheduled for the week, Hayden’s birthday is Wednesday.  She’s turning 12! 🙂  We have family pictures scheduled on Saturday morning with not only my family, but my sisters’ families too.  I can’t wait to see how they turn out!  We are celebrating Hayden’s birthday on Saturday after the pictures and the weekend is capped off with Race 13.1 Greensboro.
