Your eyes are not deceiving you, weekly fitness and MEAL plan. I’m all obsessed now about finding some great recipes that we can actually stick with as we roll into the school year. I’m not looking for anything that takes more than 30 minutes to cook from start to finish. I just know how we are and if it’s going to take longer than that, we won’t make it. So this summer is all about perfecting those recipes and having them be streamlined by the time we start back in August.
I’ve really been neglecting the Challenges. I’m going to try and do what I can this week to stick with them, especially because I won’t be hitting many weight/cross training classes this week.
Monday: early 45 minute recovery run
Tuesday: early morning run with friends 3-4 miles depending on time. May hit a CXWORX class later in the evening.
Wednesday: a one mile day (Heading to a concert with the girls!!)
Thursday: 5-6 miles
Friday: another early morning run, 4 miles
Saturday: Another summer FRUN (fun run)! We’re headed to Danville VA to run on their greenway. I’m super excited about running there!
Sunday: 4-5 mile recovery run
Now for our meal plan:
With the concert on Wednesday and my plan to run Thursday late afternoon, we really only need two meals planned out this week. I don’t plan out Friday-Sunday meals because we really just pick, eat leftovers, go out to dinner, etc.
I found both recipes in the Cooking Light May 2014 issue. It’s their FAST issue, all recipes are under 25 minutes!
I picked this recipe because it had a lot of ingredients we already have on hand. The chicken was paired up with some herbed potatoes in magazine, so I’m going to do my own take on that and make a Greek salad too for a side.
I’m pretty excited about this one! Italian Sausage is one of my favorite things! I would usually use a jarred sauce (gasp!) if we were making this during the week, so making a quick homemade sauce that I can make during the week would be awesome. Hopefully, it’s as tasty as I think it will be! We’ll have another salad with this one.
