WIAW – Weekend Meals

For this WIAW, I took some pics here and there of my weekend meals and snacks.  I remembered to take pics for some and forgot for others.  Why did I forget?!  I was way too busy shoveling the food in to remember to take them!  My lunch on Saturday was such one meal.  After my 16 miler, I was starving and my awesome steak fajitas didn’t stand a chance.  Anyone else have the same problem?!  Too hungry to remember to take a pic?

Here was my usual pre-run bar.  I still haven’t found anything that works as well as the Clif Builder’s Bar Max.  For me, it’s the right balance of carbs and protein and it’s really helping me to stay full on my long runs.  My favorite bar is the Caramel Peanut. clifbar

When I finished running, I was not really hungry.  Some weekends it takes me awhile to get my appetite back.  By late afternoon, I was back to wanting food.  We were out school supply shopping for Hayden and we stopped at one of our favorite Mexican restaurants for a quick bite.  I only snagged a pic of the chips and salsa.  chipsandsalsa

For dinner, we kept it simple and made some good ol’ grilled cheese sandwiches. Nick makes the BEST ones…buttery and super cheesy.  grilledcheese

I ran to school for a little bit on Sunday and when I got home, we wanted a little snack to carry us over until dinner, so we made some Friday’s potato skins.  They were pretty good for in a pinch. taterskins

One more weekend eat!  Nick started a crockpot of chili late Sunday morning and we kind of ate off of it for a late lunch and again for dinner.  I may have had two bowls. 🙂   He made it a bit more peppery than normal, but I loved it!  That’s the cool thing about chili, no two pots end up the same.  chili

WIAW – Dinner Edition

So a bit of mix up for this edition of WIAW!  I’m logging some of my recent dinners for this week’s What I Ate.

Greek-Style Pork Chops

WIAW – Weekend Eats

My goal for this past weekend was to take pics of my meals in Lynchburg, well…  I ended up taking just a picture of the food from the first place we at, but forgot for the other two.  So, I am calling this the weekend eats remix.  It’s a little sampling of meals I ate this weekend.

I yelped a place for us to have lunch on Friday and found The Neighbors Place.  We were looking for a place with good food, cold brews, and a patio.  This place had all three!  Most of our group met there and waited til the other girls showed up.  I ordered the Southwest Chicken Wrap.  I love a wrap and this one was really tasty!  The black bean and corn salsa sold me on it! Add in all that avocado, it was so good! I ordered waffle fries too.  They had a great beer selection also and I really liked the 40 mile IPA by Three Notch’d Brewery2014-08-08 13.56.09-1

After some shopping, I stopped at Whole Foods and grabbed my all time favorite hummus, Roots Black Bean Hummus and some pita chips.  It is amazingly good hummus.  Super creamy and a little touch of spice.  It’s made in NC too, so I love that. 2014-08-10 15.47.29

It’s been really rainy and cooler this past weekend and we decided to make a corned beef with carrots and potatoes in the crockpot.  It’s one of our favorite treats every couple of months. 2014-08-10 17.21.23

WIAW – Lazy Day Eats

Sunday was our lazy day around the house!  We were all just wiped out from the week and enjoyed a “stay at home” day recouping.  With a lazy day means lazy eats.  We didn’t feel much like cooking so we got lunch out and had leftovers for dinner.  We also didn’t feel like doing our Sunday grocery trip, so food choices were limited.

Breakfast

Two cups of coffee and one day old bagel with some olive oil butter.20140804-074825-28105294.jpg

Lunch

Nick was helping a friend move so he brought home some Jimmy John’s sandwiches.  I was 3/4 of the way through mine when I realized that I didn’t snap a pic.  He was kind of enough to let me borrow his sandwich.  Jimmy John’s are by far my most favorite sub choice.  It’s their bread!  It just makes that whole sammy.20140804-074824-28104570.jpg

Pre-Run Snack

I had to run a mile to keep my running streak going (Day 460!!) and I was in between meals and felt a little hungry so I grabbed a few Triscuits and some pimento cheese bites before I headed out.  I finished my mile and completed all my challenges.20140804-074825-28105039.jpg

Dinner

I didn’t snap a pic of this meal out of complete respect.  Leftover tacos, rice and beans do not make a pretty picture AT ALL!  It was good though.

WIAW #6 – Reset Eats

After a week of eating out and vacation treats this Wednesday’s edition isn’t nearly as exciting.  I did really well on vacation and still kept to my normal eating habits.  I did splurge a bit on some chocolate, I mean we were at Hershey!

Breakfast

Two cups of coffee and a bowl of Frosted Mini Wheats.  (Does anyone else say “wheat” like Stewie does in those Wheat Thin commercials?  Hayden and I do it all the time now! haha!)2014-07-28 12.46.17Lunch

I had an early afternoon workout planned so I ate a pretty neutral lunch.  Turkey and cheese sandwich with some tortilla chips.  I was craving the salt.  I’m such a sucker for salty foods! 2014-07-28 14.26.04

Dinner

My hubby was on cooking duty while I hit a BP class and a run this afternoon.  He cooked his best crockpot spaghetti yet!  He added in some chunk tomatoes and onion to the tomato sauce and it was perfect!  I helped myself to 2 bowls. 🙂2014-07-28 19.16.15

WIAW Travel Eats LIVE

I figured what better way to celebrate WIAW, but a LIVE travel eat edition!  So we’re heading out this morning on our vacation to Hershey, PA and I’ll be adding in my food as we go along throughout the day!   All my road snacks, pit stops and meals will be logged here as the day goes on!  I’m super excited to give this a try!

Check back throughout the day as I add in my grub throughout the day!

Breakfast
I woke up early and only wanted a cup of coffee, which I didn’t take a picture of. We hit the road at 7:30am and plan on stopping for lunch shortly in Harrisonburg, VA. Update soon! (10:36am)

Lunch

We stopped at a food truck lot in Harrisonburg, VA and enjoyed an awesome lunch at Grilled Cheese Mania! I got the Wednesday special which was an American grilled cheese sandwich, homemade creamy tomato soup with croutons, chips and some sweet tea. It was a perfect place to stop!! We enjoyed sitting outside on nearby picnic tables before getting back in the car for the rest of our trip. (12:44pm update)image

Snack/Driving Break

I took over driving after lunch and we stopped for a potty break at Sheetz. I grabbed an iced caramel latte with whipped cream on top! Just what I needed! (Update 3:29pm) image

Dinner

We grabbed a quick dinner before hitting Hershey Park for their preview hours (7:30-10pm). We hit the nearby Fuddrucker’s for burgers. I opted for the Southwest burger. Yummy burger with guacamole, bacon and pepper jack cheese. Of course, I loaded up at the toppings bar. image

WIAW – Good Eats

After weeks of “ugly” food pics for WIAW, I finally remembered to take pictures of my food from this past Saturday.  I told ya I didn’t eat just sandwiches, oatmeal and day old guacamole every day.

6:15am:  I ate a little over half of my protein bar.  One of my favorite bars is the Clif Builder’s Max Bar.  I found I need a lot of protein before my long runs so that I don’t get hungry halfway through my run.  I love the Caramel Peanut flavor and these bars actually taste pretty good.

10:00am:  Long run completed and the running crew heads to a nearby Panera for breakfast.  I got the Power Steak Bowl off of their secret menu.  It’s amazingly good.  Two eggs, slices of tomato, chunks of avocado and a few pieces of melt-in-your-mouth steak.  It truly hit the spot after my run.

2:00pm:  I had leftovers from the week.  I finished the rest of the Baked Ziti that I cooked on Thursday.  I just added a little bit more Parmesan and some salt to “freshen” it back up.  It was pretty good!

6:00pm:  On Saturdays, a local pizza place, Homeslice Pizza and Subs, serves an absolute delicacy, Beef on Weck (a Buffalo, NY fav)!  Nick found out about the sandwich from a co-worker and as soon as we tried it, we were hooked!  Firstly it’s slow cooked roast beef soaked in au jus that they strain to make each individual sandwich.  The meat is tender and juicy.  It reminds us both of the meat from Italian Beefs in Chicago!  The roll, however, makes this sandwich amazing.  It’s a Kemmelweck roll!  What’s a Weck roll?  It’s a salt and caraway seeded roll and it’s so good with the beef.   It comes with a side of au jus for dipping ( and horseradish too, if you want it).  One bite and you will be obsessed too!  I seriously crave this sandwich.

WIAW #3- Day Old Guac Color

What time is it?!  What time is it?!  It’s WIAW time!

Again of all the days I picked to take pictures, it’s the day of a sandwich, day old guac and oatmeal.  Seriously!?  One day soon, I’m going to take pictures of the most amazing day of food ever.  Just wait!

Having just come off of vacation, my appetite is all over the place.  I also don’t have a particular taste for anything since my beach week consisted of eating anything and everything I wanted to.  So this week is our reset week, back to eating a bit better.

Breakfast:  A cup of coffee and a bowl of Better Oats Oat Fit Maple and Brown Sugar (2 packets)

Lunch:  We went to the pool and by the time we got back, it was late in the afternoon so I opted for some guacamole and tortilla chips as my meal.  Unfortunately, I forgot to take a pic of it.  It wasn’t pretty guac either.  Being that it was day old, it was fairly brown but delish!  I did take a pic of the near empty bag of tortilla chips which are tasty even by themselves. 2014-07-07 21.32.06

Dinner: Tomato and Avocado Grilled Cheese Sandwich with a few Kalamata Olives as a side

I hope I don’t have a green tint to my skin with all the avocados I ate!  Couldn’t help myself.  They are so good!tomatoavocadogrilledcheese

WIAW #2

 

Here’s another edition of WIAW!  Of all the days I remembered to take pics of what I ate, it was probably the least appetizing day of food yet, with the exception of our dinner.   I need to take pictures of all the fabulous post run breakfasts and the huge burrito I ate last Friday night.

Anyways, here it goes:

 

Monday

Breakfast:  A cup of coffee and a bowl of Better Oats Oat Fit Maple and Brown Sugar (2 packets)

Lunch:  We had a great day at the pool with my sister and niece, so we made some quick turkey sandwiches before we headed back out for round 2.  I also had a side of cherries and a handful of pretzel Goldfish with my sandwich.  The cherries are SO good right now!

Snack:  A side of chips and salsa

Dinner: Greek style Chicken (one of my new recipes for the week), side salad, and potatoes (didn’t make it into the picture).

The Greek style chicken was a hit at our house with Nick and I!  Hayden liked the feta and olives, not so much with the tomatoes and onions.  Again, another easy weekday meal and it really took only 25 minutes from start to finish.  Nick was in charge of grilling the chicken, H worked on the salad, and I chopped and cooked all of the veggie portions of the Greek topping and potatoes.  I totally forgot to start the potatoes boiling before we started cooking, so they became more of a “dessert” item than a true side.

PROS:  A Kalamata olive with the chicken with the tomato and feta made for a perfect bite!  Love the saltiness from the olives with the chicken.  The tomatoes I got weren’t the prettiest, so the overall color of the topping was a little brown…not the most appealing. The taste overall was great.

CONS:  Unless you flatten the chicken breasts a bit, they aren’t cooking in only 6 minutes on each side.  We luckily did it anyways because the two pieces were huge!

WIAW #1 Summer Vacation Eats

I’ve read several posts from friends and fellow bloggers who take part in What I Ate Wednesday (WIAW) and I thought I’d give it a try this summer.  I’m not a super cooker so I don’t take pictures of too many of my meals, so this is definitely a change in my normal day-to-day routine.  I’m linking up with Peas and Crayons to share my first one.

Here’s what I ate yesterday, my first day of summer vacation:

As soon as I get up:  a cup of coffee

Breakfast: A breakfast biscuit sandwich.  Yes, it was the frozen kind, but until I have time to go food shopping, I’m finishing up my school day quick breakfast foods.

Lunch: A tuna fish sandwich and a handful of Cheez-its.  (At this point, I finished 1/2 of 50 oz Essentia water)

Post 4 mile run treat: A piña colada protein smoothie with whipped cream and non-fat yogurt

Dinner:  Grilled steak and brown rice with a chimichurri sauce from The Fit Station (we had a BOGO coupon!) and a side of black olives (salty goodness)  I worked on the other 25oz of water.  This was our first time trying out Fit Station and it was awesome!  Super flavorful and reasonably priced.  Definitely won’t be the last time we grab something there for dinner!
